Witchcraft

Or… should I say, Which-craft.  Bwahahaha.

I’m going insane. I’ve been studying wine all night. It is, for the record, about 900 times less entertaining than drinking wine. I thought I’d take a quick break from studying for my WSET exam and show you some of the sandwiches we’ve been making.

They’d pair well with a nice Chablis, don’t you think? Actually, I have no idea. In my opinion, hummus doesn’t really pair with anything except a large guzzle of mouthwash to get that chickpea-y residue out ‘yo mouth. Ew.

 

Sandwich #1:

Ham, gruyere, caramelized onions, and roasted garlic mayo on ciabatta.

Sandwich #2:

Red pepper hummus, roasted portabella, caramelized onions, spinach, and melted pepper jack on multigrain bread.

 

Sandwich #3:

Grilled chicken, guacamole, tomato, red onion, jalapeno, and melted pepper jack on shitake ciabatta.

Yes, my group has a strange obsession with caramelized onions. And pepper jack cheese. Don’t hate.

I have an ANTI-obsession with shitake mushrooms. I sautéed about 9 billion of them to make mushroom ciabatta and the fumes were toxic. UMAMI OVERLOAD!!!!

We made everything on the sandwiches (garlic mayo, hummus) except for the guacamole. I smuggled it in from Costco. I know, I know. I’ve shamed chefs everywhere.  James Beard is going to hit me with a thunderbolt or something. But we can’t order avocados fromt the school’s storeroom and we really wanted them on our sammich.

Also, I went a little bonkers at Costco last week and was looking for an opportunity to unload some excess dip. If anyone wants to help me eat four rather large packages of guac, let me know. Naturally, I don’t have any chips. I do have lots of bread, though!
